Wish we could blow out your candles...

Today, Feb. 20th, 2010 is a day that never happened for my Dad. He would have been 60 yrs. old today! I wish we could have celebrated with a big party and by blowing out 60 candles on a cake. My Dad died in a car accident just 2 miles away from his home when he was only 36 yrs. old...I was 17! I will always wonder what "would have been"! I think he would have been an amazing Grandpa (or Papa, PePaw, Gramps???) I really do miss my Dad. This birthday krept up on me...I can't believe he would have been 60 today! My...how time flies!
I wonder what he would have looked like today...would he have aged well? Would he be totally gray headed? Would he have a belly? Would he still be a funny goofy guy that made everyone laugh? Would he still jump out from around corners and scare me? Would he still have that smile like he was up to something? Would he still cook me a mean supper (he COULD cook!)? Would he have liked how I turned out (I sure hope so)? I know my kids would have loved him! I'm sure he would have let them "break the rules"! So many questions that I'll never have an answer for...
You just never know what life holds...Go grab the ones you love and give them a great big hug! Life can change in a split second only 2 MILES from home!!!

Creamy Beef Soup
~Creamy Beef Soup~
1/3 onion
1 garlic clove
1/2 stick margarine
5 med. potatoes
2 carrots
1 celery stock
1 Roma tomato (optional...had an extra one so I threw it in...don't really think it added anything)
cracked black pepper
1/4 tsp. dill
sprinkle of dried parsley
salt
1 bay leaf
left over roast (used roast from Italian Beef Drip recipe...which is AMAZING and has LOTS of flavor)
1/2 c. cream
Dice up onion and garlic; saute' it in butter. Add diced potatoes, carrots, celery, pepper, salt, dill, parsley, tomato, and bay leaf...add just enough water to cover veggies, bring to a boil and then simmer until tender. Add your meat at any time! Add cream and simmer a bit longer.
Serving size: 4
Double recipe for a larger crowd!
I love to make up recipes. Some are keepers and some...well...they never even get written down!! This one was a keeper today! I started out thinking I was going to make Potato Soup...then I got a little creative! Had this and that and it all needed used up! Give it a try...I think you'll love it!!
