~Lorene's Dressing~


This time of year things get all C-R-A-Z-Y!  I have to tell myself it’s time to take a deep breath and remember that I’m Thankful for SO SO many things!!!  I could bore you with a super long numbered blog post about all of my thankfulness or I could keep it short!  Today I've picked "keep it short"!
I’m so Thankful for the family heritage I have of being in the kitchen baking!  Yes, I do love me some kitchen time!!!  {Matter of fact it’s where I should be right now instead of typing a blog post}
Family recipes trickle down from many generations!  Through the years I’ve acquired many new recipes from tons of different sources!  One of my favorite sources is my Mother in Law Lorene!  I had a simple little question just the other day about one of her recipes and was wishing I had a direct line to Heaven to ask her about it!  I love to be able to cook/bake the things my family loves and requests every year!  In my husband’s eyes, I’ve mastered some of his Mom’s recipes and it makes my heart happy to be able to bake that special dish and bring the memories rushing back to him!
I had a friend ask me today if I made dressing.  I said with a big smile…YES I do!  She asked me in front of my husband and I don’t think she had a clue that THIS is one of those recipes that I’ve worked really hard to get just right!  When my Mother in Law gave me her “recipe” for her dressing, she only gave me the ingredients!  NO MEASUREMENTS!!  She just said a little of this and a little of that!!  It’s one of Mike’s favorites!
Keeping the post short as promised, here’s that Dressing Recipe:


Lorene’s (Cornbread) Dressing
{measurements tweaked by me}

Preheat oven to 350°
In a large skillet melt butter {about 8 tablespoons} then sauté:
2 c. celery, chopped
1 large onion, chopped
Only until onions are slightly transparent!  Pour over the following…

7-8 slices of homemade bread “chickled” up and dried out overnight {chickled is an old family word…just go with it!} it really means cubed or torn apart in pieces! {or you could use dried bread cubes from the store}
8x8 pan of cornbread {recipe following}
1 box Stove Top Chicken Stuffing Mix {optional, I’ve done it both ways and it’s equally good}  If I have it I use it!
6-7 c. chicken broth
1 tsp. salt
Fresh ground black pepper
1 tsp. sage
1 T. poultry seasoning

Taste and adjust seasonings as needed then add:
3 eggs, beaten
{the eggs are my addition!  Lorene didn’t add eggs but I feel like it makes it hold together!}
Mix well!  You can even get your hands in there to get it mixed up even better!  Kind of fun too!!

Pour dressing into a greased pan and bake until done!  Approximately 45 min.

Cornbread
Preheat oven to 400°
½ c. corn meal
¾ c. all purpose flour
½ c. sugar
¾ tsp. salt
2 tsp. baking powder
3 T. vegetable oil
1 egg
½ c. milk
Mix all together and pour into a greased 8x8 pan.  Bake for approximately 20 min.  Pulling out of the oven when top is browned.  Let cool then “chickle” it up!  This cornbread is my recipe.  I’m not sure what Lorene used but this works for us!  I suppose you could use a Jiffy Cornbread mix if you wanted to cut corners!

Alrighty now go mix you up some Dressing!  You’ll have the best dressing at Thanksgiving!  I’ll make mine first thing in the morning!!!  You'll need to prep a little the day before!  My bread is made and drying and as soon as I post this I’m going to go make the cornbread for it!  Good Luck and let me know if it was a winner at your FEAST!  Happy Thanksgiving!

Birthday Weekend & NO title necessary!



Do you ever just want to get away and be “YOU”?  I did that over the weekend!  I was able to just be the “SISTER”!  We had a super fun weekend!  Don’t get me wrong...I LOVE being a Wife, a Mom, and a MiMi but sometimes getting to just be me is super neat and very refreshing!


The best part of the weekend is that we got to celebrate the first birthday of my niece Karmyn Ann!  It seems like only yesterday that she was born and we were traveling 4 1/2 hrs. to meet her for the first time!  Happy Birthday sweet one!


We stayed with my sister Kayda’s Grandparents in Law {Jake & Esther}.  I’m pretty sure I’ve never met more hospitable people in my life!  They always open their home to us and treat us just like family!  It makes you feel as if you’ve know them all your life!  They are definitely blessed with the gift of Hospitality!  Thanks so much Jake & Esther for always making us feel SO welcome!  So many times I don’t feel like I can do enough to have guests over!  Esther made a bowl of cereal feel like we were eating at the most expensive restaurant in the world!  It wasn’t the food that made it so special, it was the fellowship, the devotion Jake & Esther shared, and their love of others that makes you want to keep coming back every weekend!


We did a little shopping...{Thanks Dad}!  We ate a FEW meals!  And simply hung out and caught up on everything!  Sunday we went to church with Joe & Kayda!  The speaker of the morning was a Missionary!  Now I have to admit I kind of most definitely had an attitude when I realized we were going to be listening (for an hour) to a missionary!  Sorry, just being honest!  Please don’t send me ugly comments...I LOVE the work missionaries do (far more than I do) and I pray for them but I really wasn’t in the mood to listen to them on this particular Sunday!  Don’t tell me you’ve never felt that way!  I’m sure my mood stems from the fact that they are out there doing God’s work while I sit at home and selfishly enjoy doing “life”!  That’s usually when God gets a hold of me and says... “Listen up Girly, I have a different plan for you today so LOSE the attitude!”
These missionaries are headed to China!  They’ve been in the training phases of it for the last 14 months!  They have 3 small children and are headed there for several years.  Bless them!
I just have to share with you one example he gave us that really tugged at me.
When a person witnesses a car wreck and is asked to testify, the jury doesn’t want to know our expertise knowledge on car wrecks in general!  They just want to know what we have just observed in that particular wreck!  It’s the same as being a Christian...We don’t’ have to be an EXPERT or a Seminary graduate to share about Jesus, we just need to share what we’ve experienced in our own life!  What He’s done for us!
Now isn’t that something!  I tend to think that I’m not smart enough & I don’t know enough so I’ll just let the experts do the work!  *Discipleship means becoming more Christ like!  I guess you could say I’m a work in progress!  SO it IS my job to share!  I don’t have to be a Preacher, Missionary, Evangelist, etc... NO TITLE NECESSARY to share what the Bible teaches!  I’m called to be a “missionary” in my own back yard so I better get to work!

I guess it’s time to get out of my selfish comfort zone and get to work as a “missionary” right where I’m at!  I’m not supposed to wait to be sent somewhere to share what I’ve experienced in my own life!  I AM a Missionary!  All I have to do is open my mouth and share what I know and what I’ve experienced myself!  How about you?  Are you doing mission work right where you are?  If not, you and I both need to “LOSE” the attitude!

Kind of quiet but not really!

Life on the farm has been rather quiet!  Somehow it still seem we've been super busy!  I've just not been very productive with "fun projects" and not a lot of baking or blogging has been going on either.
Easter came and went!  Luckily we got to see 2 out of the 4 of our Grands that day!
Keegen was out playing football in my Mom's front yard and had already been wrestling on the ground for the ball with his tie on...the evidence is on his knees!!  We had to beg him to come and take a picture!  It's just not as "cool" as it once was to sit on MiMi's lap!

He did like his Easter basket though...

Do we really ever get too old for Easter baskets?  Not me!

He's too young to realize that cleaning isn't fun!  Every time he comes over he will ask me to do different things, like clean my windows for instance~He begs!!  So I hand him the supplies!  He does a pretty good job for a 6 {almost 7} yr. old!
If you see him tell him how much you "love" to clean that way he will ALWAYS think it's a fun thing because "everyone" else loves to do it!!

It's about time!!!

I'm the worlds WORST at starting something and putting off finishing it!  I almost always complete it if I've started it but hardly ever in the same month and sometimes not the same year!  My poor grandson Mac has had to wait for his "baby" blanket!  Good thing I made it so he could grow older with it!  He didn't even know he was waiting for it!  If I only would have stayed in quilting class...
So at 2 1/2 he'll be getting it.  I can't wait to give it to him!

The Greatest gift is TIME...

Last year I received one of the greatest gifts ever!! A Recipe Box!  Not just ANY recipe box...one that was personalized and specially made for me!  The reason I titled this post "The Greatest gift is TIME..." is because there are over 125 HAND TYPED FAMILY recipes inside this little gem!  Not only did I get one, so did all the other female grandchildren in the family!  SO many recipes we've all grown up with.  Some I've used for years...some I've forgotten about and can't wait to try again!  Like Great Grandma Coral's Orange-Apricot Jello Salad (I don't really like apricots and I could have swore it was Peaches...not apricots!)  Funny what we remember (or don't remember)!  It was one of my favorites as a little girl and I haven't had it in years!

I'm not even sure if my Grandma knows how special this little box is to me!  BUT...she will now...she reads my blog!  Hi Gram!  THANK YOU SO MUCH for spending your time making this for me!  I will treasure it forever!

If you follow my blog you will see a LOT of recipes on here, that's because the LOVE of baking is something that runs deep in my family!  As far back as I can remember!  My Great Grandma N. ...My Grandma Tincy...My Mom...then me!  I'm sure it goes further back than that but that's as far back as my life takes me!

Several years ago my Grandparents went to Alaska (like they did every summer) and when they came home we had a fish fry!  HALIBUT!!  It was the best fried fish I have ever had!  Might have been the fact that my Grandparents were the ones to actually catch the fish!  If I remember right...Grandma out did Grandpa and caught the biggest fish!

I decided to stink up my house tonight and fry us some fish (unfortunately not Halibut).  I couldn't wait until we go to Alaska to catch my own Halibut so I made due with the fish I had!  I was so excited to try Grandma's BEER BATTER recipe!  Yes, Beer Batter!  It's OK...the grease is SO hot the alcohol cooks out of it!

While I was at it I decided to make her Tarter Sauce too!  I didn't have the Capers or Parsley.  I'm also too impatient and didn't let it refrigerate overnight.  It was the best ever and I'm sure letting it rest over night would have made it even better!

Little Lovey...

When I saw this Ruffled Blanket I knew I had to try to make one!  The name caught my attention AND I love Ruffles!!!  We called one of our Grandma's "Lovey" so I knew it was a fit for my new little niece Karmyn!  It's just the right size for the car seat, to cover her up with, to use in her stroller...etc.) and will be something soft she can snuggle up with when she's a little older.  I mailed it on Monday and they received it on Wednesday!  Pretty fast delivery!
Kamron (my youngest sister) text me a picture today of her covered up with it!  Made my day!  Isn't she sweet...
 And...a car seat picture!  Have binky, lovey, and friends...ready for my car ride!

Sisters...

I had to wait MANY years (as in 16, 17, & 21 yrs.) for my sisters...it was completely worth the wait!  I got 3 of the best!!


And NOW I'm blessed with another bit of sweetness...

Yes, I know, all my sisters are blondes and I'm the odd ball!  So happy for a little dark headed sweetie (after me of course)!  I would love to claim that this trait came from me but...her daddy has dark hair!  Oh well, I think I'll claim it anyway!!


I'm SO glad I made the 4 1/2 hr. trip to meet her in person!  Pictures on the computer just weren't cutting it for me!

~Groovy Baby Shower~

My little sister, Kayda, is going to have a sweet baby girl!  She's due October 30th!  I'm crossing all my fingers AND toes that she arrives during my birthday month...which is OCTOBER!  Kayda is hoping for 11-1-11 which is a pretty cool date to have as a birthday!  Someone suggested at the shower that an even better date would be 11-11-11!  Kayda said NO WAY!
We had so much fun giving her a shower on Saturday!  It was a Groovy/Hippie theme!  We had fun with that!  Lot's of tie dyed stuff!!  Have I told you before that I LOVE to be in the kitchen??  Well, I do!  I got to make most of the goodies!  It was almost as much fun doing a photo shoot for them (the goodies) as it was making and eating them!  I'll share a few pics with you...and as soon as my sister (KEESHA) gets me more pictures...I'll share the whole table scape view!
These cupcakes were SO much fun to make!  There is actually 4 colors in there but the yellow and green were so close that I should have separated them more!  I used...1 Strawberry cake mix-1 Lemon cake mix-1 white cake mix tinted purple-1 white cake mix tinted green.  The flavor was amazing!  It was kind of like a "Lemon/Berry" taste!

I got the idea from here!  Candy Wafers melted tinted and peppermint flavoring added!  Dropped out on wax paper in blobs and swirled together with a tooth pick!  I was a little gun shy on the first batch to "get with it" and really swirl!  The second batch I kicked it up a notch!  Be VERY careful to NOT over heat the wafers when melting them in the microwave!

Here's the candy all broken up...after the shower was over and it had been picked through!  I forgot all about taking a picture of it before so there weren't little candy crumbs all over!

Sad Day...

Today is a very sad day here on earth for our family...but I know all the angels are rejoicing in Heaven.  A very sweet lady, my Mother in law, was welcomed Home last night.  She was the sweetest most unselfish lady and sacrificed much in her life for her boys.  If I could only be half the Mother that she was to her four boys.  She was VERY loved and will be greatly missed...
